THE PIZZA ADDICTION
We have a serious pizza addiction in this household, so you can bet that finding the perfect Fathead Pizza crust recipe was a glorious moment for me. I honestly don't remember where I found the original recipe that I altered to become my version of Fathead pizza, but I was inspired to try it after seeing a few fellow Keto Bloggers post photos that really looked like proper pizza bases. This almond flour base is low in carbs, sugar free, and full of good fat. It is delicious! I am not sure if my husband simply hasn't tasted real pizza in so long that he is delirious, but he claims he prefers this to "real" pizza! WIN!
The awesome part about this totally-from-scratch pizza is that it literally takes minutes to prepare. The dough doesn't need heavy kneading, and it doesn't have yeast or need to proof, it takes MINUTES.
My husband loves it, it's easy to make, and the base requires ingredients I always have on hand. For all of these little reasons Pizza night has become an almost weekly occurrence, and we have fun playing around with whatever ingredients we have around as toppings.
WHITE KETO PIZZA
WITH BALSAMIC CARAMELIZED ONIONS, ROASTED MUSHROOMS, MINZANO TOMATOES, GOATS CHEESE & FRESH BASIL
Preheat: oven to 425 F
* Thinly slice up red onion & slowly sauté until caramelized (allow to sit and cook during the following):
1.5 C Mozzarella Cheese
2 Tbsp Cream Cheese
3/4 C Almond Flour
1/2 tsp garlic powder
salt & pepper to taste
dash of dried oregano
dash of dried basil
Melt mozzarella cheese & cream cheese.
Mix in almond flour, egg, spices, and mix until smooth & blended well.
Form into a ball.
Flatten between two sheets of parchment paper, and roll to desired thickness.
Gently peel off the top piece of parchment, and place the crust on parchment onto a baking sheet or pizza pan
Cook for 8-9 minutes.
Allow to cool, remove from parchment paper, place onto a pizza sheet or stone.
Creamy Herb & Garlic White Pizza Sauce
2 Tbsp butter
2 Tbsp cream cheese
1/2 C parmesan cheese
1/4 C heavy cream
1/8 tsp oregano
1/8 tsp dried basil
1/8 tsp garlic powder
salt & pepper to taste
Melt down & cook slowly constantly stirring to avoid lumps. Once sauce is smooth, remove from heat and set aside until crust is done.
White Pizza sauce
Shredded mozzarella cheese
fresh white sliced mushrooms
fresh mini grape tomatoes sliced lengthwise
freshly chopped basil
Assemble pizza in the order listed above. Cook for approximately 8 minutes, watch and remove when crust is golden and cheese is bubbly.
The above recipe makes one standard 15 inch pizza about 1/4 inch thin. Cut into 8 slices, or as desired & serve.
Serving suggestion with: Greek Salad
